A while back, we were riding Disney’s Skyliner decided to stop off at Pop Century Resort because we hadn’t been there in a minute. It’s a fairly short walk from the Skyliner station to the resort as this stop is between Pop Century and Art of Animation. You get to see nods at trends from the 1950’s-1990’s throughout the property, if you’ve never been here it’s very cute and worth checking out.
We went to Everything POP to see what vegan options they were offering. Everything POP is a centrally located food court where you have different stations of options, from a pasta station to a salad one. This is really convenient when you don’t want to take the time to do a table service, or are just looking for something quick to eat.
We were pleasantly surprised to see they had multiple vegan options: a Roasted Vegetable Sandwich, Plant-Based Mickey-shaped Waffle (Mickey waffles offered AT NIGHT… yes please!), Vegetable Soup, a Plant-based BBQ Burger, and a Chipotle Seitan Sauté (like the ‘scramble’ they do for breakfast). We weren’t hungry, or necessarily planning to eat but, when we saw the pre-made Roasted Vegetable Sandwich behind the counter, we had to order it.
This sandwich was HUGE and packed with roasted veggies. It comes with sea salt lentil chips which are just Enjoy Life chips (they open from the bag and put on your plate). We noticed they also made house chips similar to the ones you can get at Grand Floridian Cafe and Gasparilla Island Cafe so we asked if we could have those as well (we did not ask if they were in their own fryer at the time). This sandwich was shared between the two of us and would easily be a filling meal for one person.
Inside the sandwich was a sun-dried tomato hummus spread with fresh arugula, zucchini, caramelized red onions, roasted mushrooms, sun-dried tomatoes, and avocado. Everything tasted fresh and we loved this strictly veggie option.
I would definitely get it again, especially since it is such an easy stop off the Skyliner from Epcot or Hollywood Studios.
