If you’ve been a follower for a while I think by now you know my distaste for the Vegetable Korma from Sunshine Seasons in Epcot. Fortunately they also have a vegan sandwich available for me to get instead.
Sunshine Seasons is located inside the Land pavilion in World Nature in Epcot. This is home to the best ride at Walt Disney World, Living with the Land. It’s also where you’ll find Soarin’. Sunshine Seasons is set up similarly to a value or moderate resorts quick service area where they offer several food stations and you add them all onto a tray then pay at once. Over at the sandwiches station you will find the Mediterranean Vegetable Sandwich.
This sandwich is on an Herbed Focaccia and has hummus, roasted red pepper, red onion, arugula, tomato, and a balsamic vinaigrette on it. The ratio of filling to bread was not great, as the filling was very minimal making the bread seem dry (one slice of each vegetable). The size of the sandwich was great though, just lacking the insides.
This option would be one I would get again, however I could use at least twice the amount of filling. But all that being said, we really enjoyed this sandwich. It was the perfect light option for a hot day. The flavors were enjoyable with the vegetables and hummus.
Of course they do also have one of the best desserts here, the Cookies ‘n’ Cream Mousse cup. This can be found at the dessert station, and the good news is if you’re gluten free they can make you a fresh cup with the cookie crumbles and it’s good to go for you! This dessert is a bit too sweet for me, but I do love to steal a few bites from my boys when they get it. Plus it comes with a lid so if you are on your way back to the resort you can buy a few and put them in your fridge.
This is a great spot for the whole family as if you’re traveling with non-vegans there is something for everyone. If you’re here for a festival then I suggest grabbing this as a meal before snacking around the world.

Agreed. The sandwich was too “bready”. Loved the filling, just needed more.
